pre-heat the oven to gas 2, 300°F (150°C).
Soften the butter by beating it with a fork, add the sugar and continue to beat, then add the flour and semolina..
Use your hands to rub throught the ingredients and work into a dough.
Dust your work surface with flour and roll out to a thickness of about 4mm thick. Cut into your chosen cookie cutter shape, remoulding and rolling out again the trimmings.
Transfer to a greased Baking sheet or bake on baking parcment for 15-20 minutes 9golden brown). Remove from the oven and transfer to the wire rack to cool.
Once cold, add cream and strawberries for a true stawberry shortcake dessert.
